Onions are the world’s most used staple vegetable, but in a newly published cookbook they are given star status. From the book, created in the Andalusian hinterland, you get a taste of Spanish dishes.
Onions are one of the most used vegetables in the kitchen, no matter what cuisine in the world you cook from. This also applies to Spanish cuisine. Plus, onions are cheap and have beautiful shapes. Despite this, onions are far from star status, according to cookbook authors Ingo Schauser and Henrik Vilain. However, the pair change that in their latest cookbook, ONIONS.
In the book, all types of onions play a leading role; Zittauer, red, salad, spring, spring onion, shallot, white, pure, pearl, ramson, scallion and leeks.
The couple finds inspiration for their recipes in the large vegetable gardens that surround their finca and training center in Andalusia.
The book covers a wide range of world cuisine, but the couple’s reinterpretations of Spanish classics have naturally also found their way into the book. The book is only available in Danish, but you can still enjoy this taste of its recipes.

1 Escalivada – oven baked vegetables in olive oil
A delicious warm salad filled with Spanish late summer vegetables that are also available well into the fall.
Onions and garlic are joined by peppers, courgettes and aubergines. The vegetables are grilled in the oven or on the grill.

2 Spanish garlic soup with poached egg
In this steaming soup, the garlic comes into its own. It is accompanied by smoked Spanish paprika and topped with poached egg. A great fall dish.

3 Empanadillas – with caramelized onions, salty lemon and raisins
Wherever you are in Spain, you can find a café or takeaway selling empanadillas with a variety of fillings.

The recipes are from the cookbook LØG, written by a Danish couple behind Garden of Lemons in Andalusia. The book features a wealth of vegetarian dishes with onions in the starring role. The cookbook is only available in Danish.

About the authors
Henrik Vilain and Ingo Schauser run the Garden of Lemons retreat and training center in the Lecrín Valley in Andalusia and are experienced cookbook authors. It is in the kitchen at Garden of Lemons that all the recipes have been developed. And many of the dishes have been tasted by the many students who visit the center.
