This lovely Andalusian tomato salad is a perfect summer salad for a summer dinner in the garden or for the lunch table. The tomato salad is sweetly accompanied by fresh figs and a tangy kick from the lemon. The recipe was developed by Tina Scheftelowitz.
Ingredients
1 kg tomatoes
50 g onion or red onion
400 g fresh figs or 100 g dried
small bunch/pot fresh basil or parsley
1/2-1 organic lemon
Dressing
1 clove of garlic
4 tbsp olive oil
3 tbsp freshly squeezed lemon juice
salt and pepper
How to make Tomato Fig salad with lemon
Start with the dressing. Finely grate or press the garlic. Mix with the other ingredients.
Slice the tomatoes and place them on a large platter.
Cut the stems of the figs into thin slices and mix with the tomatoes. Peel, halve and cut the onion into thin rings. Spread them over. Halve the lemons lengthwise, cut them into ultra-thin slices and arrange them on top.
Taste the dressing with the piece of each salad ingredient. Need some salt and pepper?
To serve: drizzle the dressing over the salad and garnish with basil leaves.
