Fried aubergines with honey (berenjenas a la miel) is a simple Spanish dish that tastes great on a tapas table. They are crispy and not as hard to make as they look.
Recipe for fried eggplants with honey
Ingredients:
1 eggplant
4 tbsp dark syrup
1 tbsp honey
1 sprig thyme
mel
salt
oil
Directions
Cut the aubergine into 3 mm thin slices. Coat the aubergine slices in flour and fry in plenty of oil in a pan over a medium heat until golden. Drain, add a little salt and leave to rest.
Heat the syrup, add honey, 1 sprig of thyme and mix in a little water until it has a syrupy consistency and boil it down. Arrange the aubergines and pour over the syrup.
